- 2 chicken breasts
- 3 tablespoons butter
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 medium onion, minced
- 1 small jar sun-dried tomatoes, chopped
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1 cup spinach
- 1/3 cup grated Parmesan cheese
How to Make Chicken Parmesan
- Season the chicken breasts with salt, pepper, and half a teaspoon of oregano.
- In a large skillet, melt the butter over medium-high heat. You can also add a bit of oil from the sun-dried tomatoes for extra flavor.
- Add the chicken breasts to the skillet and cook for 3-4 minutes, or until they are browned. Once cooked, remove the chicken and set it aside on a plate.
- In the same pan, add another tablespoon of butter to make the sauce. Sauté the garlic, onion, sun-dried tomatoes, and the remaining half teaspoon of oregano until fragrant.
- Pour in the heavy cream and chicken broth, stirring for 2-3 minutes until combined and smooth. Adjust seasoning with salt and pepper to taste (about 1 teaspoon is recommended).
- Stir in the spinach and cook until it wilts.
- Return the chicken breasts to the pan and cook for an additional 2-3 minutes to heat through.
- Garnish with fresh chopped parsley and serve hot!
