Ingredients
- 1 cup chopped fresh pineapple
- 1 cup sliced apples
- 1 cup orange slices
- 1 cup sliced strawberries
- 1 cup grapes
- ½ cup shredded coconut
- 1 tablespoon cornstarch
- ⅓ cup lemon juice
- 3 tablespoons sugar
- 3 tablespoons orange juice
- ½ cup silken tofu, pureed
- 2 teaspoons grated orange zest
- 1 teaspoon poppy seeds (optional)
Instructions
- In a large bowl, combine the chopped fruit and shredded coconut. Toss gently until well blended, then refrigerate.
- In a medium saucepan, mix the cornstarch with the lemon juice and stir until combined. Over medium heat, add the sugar and orange juice. Cook while stirring constantly until the mixture thickens, about 5 to 10 minutes. Remove from heat and allow to cool completely.
- Once cooled, fold the pureed tofu, grated orange zest, and poppy seeds (if using) into the cooled juice mixture. Chill for at least 1 hour.
- Just before serving, pour the creamy dressing over the chilled fruit mixture and toss gently to coat.
