Autumn Spice Carrot & Apple Cake

Ingredients:

  • 1 tsp baking powder
  • 2 cups grated carrots
  • 1 cup diced apples
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour (or additional all-purpose flour)
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup vegetable oil (or melted butter)
  • 1/2 cup honey or maple syrup (or 3/4 cup sugar)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk or orange juice (for added moisture)

Instructions:

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan.

Step 2: Prepare Dry Ingredients

In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Step 3: Mix Wet Ingredients
