Simple Chicken Parmesan Delight

Ingredients

  • 2 chicken breasts
  • 3 tablespoons butter
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 medium onion, minced
  • 1 small jar sun-dried tomatoes, chopped
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup spinach
  • 1/3 cup grated Parmesan cheese

How to Make Chicken Parmesan

  1. Season the chicken breasts with salt, pepper, and half a teaspoon of oregano.
  2. In a large skillet, melt the butter over medium-high heat. You can also add a bit of oil from the sun-dried tomatoes for extra flavor.
  3. Add the chicken breasts to the skillet and cook for 3-4 minutes, or until they are browned. Once cooked, remove the chicken and set it aside on a plate.
  4. In the same pan, add another tablespoon of butter to make the sauce. Sauté the garlic, onion, sun-dried tomatoes, and the remaining half teaspoon of oregano until fragrant.
  5. Pour in the heavy cream and chicken broth, stirring for 2-3 minutes until combined and smooth. Adjust seasoning with salt and pepper to taste (about 1 teaspoon is recommended).
  6. Stir in the spinach and cook until it wilts.
  7. Return the chicken breasts to the pan and cook for an additional 2-3 minutes to heat through.
  8. Garnish with fresh chopped parsley and serve hot!
